Sweet Potato Hash

The perfect balance of sweet and savory, a homemade hash made with sweet potatoes that's the missing piece to your breakfast plate!

While I can appreciate the goodness of a traditional breakfast hash, this sweet potato hash is next level delicious! Made with bacon, bell peppers and onions, it's a flavor combo that's unforgettable and thankfully, super easy to make. Plus, it reheats well, so you can make this in batches and eat it throughout the week!

 

Sweet Potato Hash

Makes 6-8 servings


Ingredients

  • 6 Medium Sweet Potatoes

  • 1 Red Bell Pepper, chopped

  • 1/2 Medium Sweet Onion, chopped

  • 1 tsp Sea Salt

  • 1/2 tsp Ground Black Pepper

  • 2 - 3 tsp McCormick's Smokehouse Maple Seasoning

  • 4 Strips of Bacon

Instructions

  1. Fry your bacon in a large skillet over medium-low heat.

  2. Remove the bacon strips from the pan when they're done and set aside. Keep the bacon grease in the pan.

  3. Chop up your onion and bell pepper. Add the chopped onion to the skillet with bacon grease. Cook until the onion is mostly translucent. Then add the bell pepper and cook until softened.

  4. Skin and cut your sweet potatoes into bite sized pieces. Add them to the pan and season them.

  5. Stir as needed to ensure the bell peppers and onions don't burn at the bottom of the skillet and all potatoes are well seasoned.

  6. Cover on low heat until the potatoes are tender, stirring as needed.

  7. *Optional* Chop up your bacon strips and stir them in right before serving. I personally prefer to eat the bacon on the side, it's delicious either way.

Note

  • If you don't want to buy the McCormick's Smokehouse Maple Seasoning (you should, it's sooo good), you can create your own with salt, brown sugar, garlic powder, onion powder, paprika, and chili pepper.
