M&M Blondies

Ooey gooey & chewy, with delightful bursts of chocolate M&Ms. The festive colors make them an easy holiday treat!

I love baking for the holidays, and usually give treat boxes to friends and family members with an assortment of goodies. Adding green and red M&M's to these blondies make them festive and a delicious option for gifting (or eating yourself!). Blondies are the cookie version of brownies, and these do not disappoint, with their ooey gooey and chewy texture, crisp edge and thick bite. They come together in less than 30 minutes, and are soooooo good.

Makes an 8x8 pan


Ingredients

  • 1/2 cup unsalted butter, melted

  • 1 cup light brown sugar, packed

  • 1 large egg

  • 1 tsp pure vanilla extract

  • 1/2 tsp baking soda

  • 3/4 tsp salt

  • 1 1/4 cups all-purpose flour

  • 1 cup M&Ms

Instructions

  1. Preheat your oven to 350 degrees. Line an 8x8 pan with aluminum foil or parchment paper.

  2. In a large bowl, heat the butter until it is just melted and let cool.

  3. Pour the light brown sugar in to the butter and whisk until combined.

  4. Add the egg and vanilla extract and whisk until smooth.

  5. Add the baking soda and salt and whisk until combined.

  6. Spoon the flour into your measuring cups and level off the tops. Add the flour to the mixture and fold into dough with a spatula.

  7. Spread the dough evenly into the prepared pan.

  8. Bake in the oven at 350 degrees for 22-25 minutes, until a toothpick inserted in the middle of the center comes out clean (a few moist crumbs are OK too).

  9. Remove the pan from the oven and transfer the blondies out of the pan and unto a cooling rack.

  10. Allow them to cool completely before cutting into separate servings.

Notes

  • Be sure to let your butter cool before you begin mixing your ingredients, especially the egg. You don't want to scramble it!

  • Really pack the light brown sugar into your measuring cup, as much as will fit. You should see a smooth full mound in your butter when you empty it into the bowl.
